Cooked oysters can be presented in three ways: they can be placed in the washed and reheated bottom shells and then baked or broiled with various stuffings and sauces; they can be gently poached with other ingredients (including other shellfish) and served as oyster stew or oyster panfry or they can be used to provide the sauce and garnish for fish or chicken. Oysters are so versatile that you can even have an all-oyster dinner, starting with raw on the half shell, followed by hot on the half shell, followed with a stew, and finishing with a piece of fish that has an oyster garnish.
