While a sizzling steak right off the grill is hard to resist, many of us are afraid of looking like an amateur and ruining a sizable investment in red meat. Keep in mind that the only thing that can go wrong is drastic overcooking, and fortunately a steak provides plenty of warning before it gets near that point. Still, knowing when a steak is cooked just right takes experience—there is no way to fake it—and until you have the experience, the only way to know for sure is to stick a thermometer through the side or to cut into it. If you can be covert about it, fine, but don’t just guess.
