Pork has so many tender muscles that virtually any part can be sautéed just long enough for the heat to penetrate the middle. While less than ideal because of their fat and gristle, shoulder pork chops can be sautéed and paired with a simple pan sauce. Any of the chops from the loin, including center-cut rib chops or loin chops, sauté beautifully. As you approach the leg, you may sometimes find ham steaks that, as their name implies, can be sautéed in the same way as their bovine cousins.
