Shallots are like miniature onions, with a particularly clean, direct flavor. They are especially delicious in sauces, or sprinkled on sautéed vegetables near the end of cooking so they remain a little raw, thus delivering a little bite. Shallots are minced like regular-sized onions, just in miniature.
