There are two basic kinds of squash: winter squash, which starts to appear in the fall, and summer squash, of which zucchini is the best known member. Zucchini, both green and yellow, can be sautéed, baked, or grilled to rid them of their water and bring out their flavor. Winter squashes, however they are served, are almost always baked at least as a preliminary step.
