These mildly hot, dark green chiles have more flavor, or at least a more distinctive flavor, than bell peppers and can be used in recipes that call for bell peppers or when you want the flavor, not just the heat, of chiles. They are charred and peeled the same way as bell peppers and are delicious stuffed for chiles rellenos.
