Most beans, with the exception of green beans, are available either dried or canned. However, some beans that many cooks typically think of as only dried or canned are showing up fresh nowadays, too. They are sometimes labeled as shell or shelling beans, and lima, fava, and cranberry are among the most common. Fresh lima and cranberry beans are cooked in simmering liquid for anywhere from 10 minutes to 1 hour, depending on how fresh they are, while fava beans need to be peeled twice, and once peeled they require only a few minutes of simmering.
