When I was a child in the fifties, these cookies were still known as icebox cookies—and there were even a few actual iceboxes still in use. This type of cookie is made from a dough shaped into a cylinder or rectangle—or other compact form—then chilled. Right before baking, the dough is cut into thick or thin slices and placed on the pans. These cookies are the original convenience foods. You can mix up the dough today and slice and bake cookies tomorrow—or even next week or next month if you freeze the dough.
