Liquorice is a root with a strong aniseed flavour. It is sourced from Calabria in southern Italy, as well as from Southeast Asia, Iran and Afghanistan. Thanks to the use of liquorice as an ingredient in top-end Copenhagen restaurants, it’s more than a sweet, it’s a staple spice.
Vast amounts of liquorice are consumed in Denmark, where it is made into a salty liquorice confectionery, a powder, granules or an extract to add to ice creams and caramels, or transformed into salt to be sprinkled on savoury dishes. It’s also excellent with berry jam and tastes good with dark chocolate and game meats.
