Preheat the oven to 250 degrees. Split 1 or 2 loaves of French bread in half lengthwise. Quarter each half by cutting crosswise. Place on a rack in the oven and bake 20 to 30 minutes, or until the bread is dried throughout without browning. Break or cut the bread into small pieces and put the pieces in the container of a food processor or electric blender. Blend to a fine powder. The yield will depend on the size of the loaves.
