All vegetables, not just French beans, should be treated with great respect. Although they are normally treated as mere accompaniments, it is a very great mistake and a sacrilege. Nothing is more delicate, fine and delicious or more marvellous than the pure fruits of the earth. They really suffer from being handled roughly – heat makes them wilt, cold deadens them. But treat them lovingly and they will pay you back many times over.
