The following nine recipes are for vegetable omelets that can be eaten cold or warm. They are Nice's omelets—fresher, lighter, tastier than their northern French counterparts. Wonderful for picnics or buffets, they can also be served warm for lunch. They look like plump pancakes—green, red, or yellow, depending on whether you choose spinach (troncha), tomatoes, (erespeon), or potatoes (crique). For any of these omelettes jardinières, the process of cooking them is the same.
