The mirepoix cut is one of the most important in classic French cuisine and is used as an aromatic garnish for any cooking process applied to fish, seafood, crustaceans, meat, poultry, marinade, etc. It is cut according to the length of cooking time. The mirepoix is always strained from the cooking liquid and is never served with the main dish.

Mirepoix also refers to a blend of aromates made up of carrots, onions, and/or leeks and celery that are also always cut in a mirepoix.
