Herbes de Provence is a combination of herbs that is said to reflect the flavors of southern France. The mixture was developed in the 1970s by spice wholesalers, and consists of savory, fennel, basil, thyme, and lavender. Prior to prepackaged herb combinations, chefs would collect herbs growing in the countryside for their herbes de Provence.
