Unless otherwise specified, when a recipe calls for one egg it means one large egg. The average large egg is approximately 2 oz (55 g). This weight varies from egg to egg, which is why eggs are sold by a minimum weight per dozen. For example, a dozen large eggs must have a combined weight of at least 24 oz (680 g), but no more than 27 oz (765 g). Other sizes (also classified by weight per dozen) include jumbo, medium, and small.
