With different flavor outcomes, duck, goose, and quail eggs can be used in much the same way chicken eggs can. Clearly, due to size differences, adjustments to existing recipes need to be made. A bit of common sense tells you that a soufflé made from tiny quail eggs would be extremely expensive, not to mention laborious. Quail eggs do, however, come pickled to be served as a cocktail snack. Also, there are specific recipes calling for quail eggs which generally involve aspic. Ostrich and emu eggs can be hard cooked or scrambled but remain somewhat of a culinary curiosity. Gull eggs, considered a delicacy in England, are also popular in Scandinavian countries, particularly Norway.
