Quail

The quail is a smaller member of the pheasant family. It is a migratory bird found in Europe from April to October. In antiquity, quails were so plentiful that their migrations used to blacken the sky, but sadly they have been driven to the brink of extinction by the spread of pastures and hunting. Today, quails are mostly farmed worldwide. These birds are the smallest of domestic fowl and very delicate to handle. They are generally served boned and stuffed or en crapaudine.
