While poussin is simply the French word for a young chicken (under 28 days old), in the United States it is used as an alternative name for the Cornish game hen. As a cross between a Cornish and a White Rock chicken, weighing approximately 2.5 pounds (1 kg), it is the perfect size to be plated as a single serving. Common cooking methods include roasting and broiling.
