In the broadest possible sense of the term, a farce can be any savory ingredient that is used as a filling. For example, the rice, tapioca, mushroom, and salmon mixture in the petit coulibiac (recipe featured in Classic Recipes) is a farce, just as the pork and veal mixture in petits farcis niçois (recipe featured in Classic Recipe) is also. The nuances of the word farce go beyond “fillings” when we consider that farce à gratin (recipe featured in Classic Recipe) does not technically fill anything, but is rather designed to be finished under a broiler as a garnish for a canapé.
