Margarine was developed in 1869 as a cheap butter substitute for the poor and for the French navy. It was originally made from beef tallow and skim milk, and was an instant hit in the dairy industry since it made use of the skim milk, which at the time was merely a by-product of butter making. Today, the beef tallow has been replaced by vegetable oils.
