This yeast risen dough is designed specifically for savarin pastry, which is served soaked in rum syrup. To be effective for this purpose, the baked dough must be both porous enough to take in the syrup (imbibage) and firm enough to not get soggy. Its high egg-to-flour ratio is what gives this preparation the ideal structure.
