The term biscuit translates as “twice” (bis) “cooked” (cuit). Originally, it described a dough that was dried by baking it a second time. In modern terms, biscuit describes a variety of preparations, but no longer requires the second cooking time. The English use of the term biscuit tends to be specific, but its meaning varies between different English-speaking countries; depending on the country, cookies, sponge cake, and crackers may be described as biscuits. In French cooking, or more specifically, pâtisserie, the term biscuit covers all of the above, but is used primarily for sweet preparations.
