There is a group of Filipino foodies that visits some of the better restaurants around Manhattan and enjoys tasting menus. I came up with this menu for them one afternoon in the winter of 1995, incorporating a couple of the dishes I was running as specials at the restaurant, as well as a game dish. This is a group of very adventurous eaters, so I enjoyed serving them dishes that are usually too "out there" to include on the restaurant’s regular menu. The hare with chocolate sauce was a perfect dish for this group—but would probably never sell to the average customer!
