At the Savoy [Hotel, In London], we had a dessert that I thought was absolutely great. It was white poached peaches, stoned, and filled with chestnut mousse with a light Grand Marnier sauce served with lemon sherbet. It was refreshing, and it tasted like fall. I’ll never forget it! —Dieter Schorner
