The reason I think this menu works so well is that the flavors of the dishes are very direct, but subtle and clean, so that it is possible to have a menu with three sauced courses.
The consommé is the real break between two sauces, as I deplore the continued use of sorbet to cleanse the palate. If the menu is composed properly, why should you have to cleanse your palate? The consommé here is to warm your stomach and invigorate your appetite.
This menu celebrates the quality of ingredients available to us today, and the menus at J.T.’s are written to reconfirm, as when we opened Stars, that the ingredients are the engine of the menus and recipes, more than ideas or preconceived notions.
