Green garlic is very young garlic that is pulled from the ground before the full cloves have developed. Fully developed garlic is an annual crop, but green garlic can be cropped three or four times in a growing season.
If you have a garden you can grow it yourself by planting garlic cloves bought from the market in good, well-drained soil and keeping it well watered. The cloves only start to develop as a separate entity from the stem after about six weeks. Up until then they are like tiny leeks or spring onions and don’t look dissimilar.
