Potatoes are woven so hard into the tapestry of our eating that it is difficult to imagine a diet without them. The odd thing is that, despite the fact that most of us eat potatoes in one form or another every day of our lives, we still tend to think of them as the bland vegetable which accompanies the main ingredient.
As many of the recipes that follow demonstrate, however, the humble potato can often play a starring role.
