It is no accident that flavor is the first cornerstone to any successful dessert. Without it, the pastry chef’s work would be pointless. As a pastry chef, keep the following essential question in the back of your mind: Does the dessert have flavor or, even though it may be pleasing to the eye, is it bland and does it, therefore, merely represent empty calories?
