Soft fruit, such as strawberries, should be sprinkled with icing sugar to taste. Grilled or fried fruit are alternatives - try sliced grilled bananas or chunks of fried pineapple. Poached and puréed fruit are ideal fillings. Place filled crêpes in a buttered ovenproof dish, dust with icing sugar and reheat briefly in the oven before serving.
