As much as we love our meat, for some reason, the majority of us either don’t understand the various cuts on offer or choose not to be picky. Remember, butchers are qualified professionals or, if not, have years of knowledge and experience – use it! What I find is that people tend to purchase meat based on price and not based on what they’ll be using it for. Knowing where your meat comes from, how it was reared, the type of life it had and when the animal was slaughtered can all have an effect on flavour and taste. Don’t be shy to quiz your butcher or supplier a little next time.
