It is said that the technique of grilling kababs on a skewer was first invented by soldiers on the march, who used their swords to skewer meat then cook it over the open fire. They would simply grill plain meat sprinkled with salt and perhaps some spices. Palace kitchens then added a lot of spices to their grills, to make them fit for the royal table.
