In Japan, rice is harvested in autumn (except in Okinawa). Every year, I am excited during the season when rice is harvested. This is when I feel most grateful for the blessings of nature. New rice shines like pearls and is very sweet.

Japonica or Japanese rice are short-grained, and contains more starch than long-grain rice. If not washed thoroughly, the starch in the rice grains will produce an unpleasant smell when cooked, and the rice will become too sticky. It is therefore important to rinse the rice grains properly before cooking (see page 132).
