I am very fortunate to be surrounded by a core of supportive people who help me in myriad ways with my various books and projects. I’ve been fortunate to work with many of you before and hope to continue to do so.

When compiling a cookbook, little if anything is more important than the certainty that the recipes do what they say they’ll do. For this, I have to thank my recipe tester, Stephanie Shapiro, whose careful attention to detail and ability to spot ambiguities and contradictions have been invaluable. She also helped proofread many of the recipes and came up with some ideas of her own. Her hands also appear in the how-to photographs.
