One would expect the Caribbean islands to be saturated with seafood. The fact is that once you have left the coastline fresh fish can be hard to find and much of it is snatched up by the hotels and restaurants. Those of us who live inland have often relied more on salted cod, mackerel and shad as staples rather than on fresh fish and this is probably due to the days when refrigeration was an issue. Naturally, you can take home a fish to cook but supermarkets often freeze them and a great deal is lost in the process.
