A famous saying in Trinidad: ‘the island where birds speak French, oysters grow on trees and the flowers bloom at night’.
Once you have arrived in a Caribbean town or village the most colourful and lively spot to check out will be the market. Usually open from very early in the morning, this is the hub where all the fresh produce will arrive from the nearby countryside, and goods, cash and news will be exchanged for a few hours. The supermarkets cannot compete with either the freshness, variety, price of goods or critical point of communication. From memory, it is the least altered part of our towns.
