Never in the refrigerator! Moisture is one of chocolate’s worst enemies, causing streaks of white (see How to avoid bloom). A well-wrapped chocolate in a dark, dry place will keep for a long time without losing any of its aromas.

Keep chocolate bonbons in a box, if possible. They should be kept in an airtight container or covered with plastic wrap. Since chocolate is a product that contains fat, it tends to entrap the odors that surround it (like onions) and lose its own, just as a badly stored spice will do.
