An Enoteca would be lost without its assortment of breads. Even if it has no kitchen, crostini, bruschette, and sandwiches can be assembled easily, and focaccia and savory pastries can be purchased at a neighboring gastronomia or bakery. Delicate single-crusted tarts or heartier double-crusted pies called torte salate form a significant segment of the menu. These might be filled simply with cheese and eggs or more elaborately with mushrooms or greens. Another kind of torta, called pizza rustica, has a hearty filling of eggs and cheese interlaced with pork, sausage, and ham.
