Sauce Mayonnaise must be used with discretion to dress salads as it can be indigestible; some people cannot bear it particularly late at night at the end of a dinner.

Equally, raw onion should be used sparingly as many people do not like it and in any case it must be very finely sliced, washed under cold water and firmly squeezed in the corner of a clean cloth to remove the acrid juices.
