Gombos—Okras

This vegetable is much used in the Americas and the Far East but is not in general use in Europe despite attempts to popularize it.

There are two kinds, the long thin finger-like ones, and the round ones which are also known as Bamia or Bamies.

The following recipes are suitable for both kinds.
