The Caucasian regions –Georgia, Armenia and Azerbaidzhan –are characterized by a Mediterranean climate of sunshine, long hot summers and mild winters. The regions are mountainous with fertile valleys. The geography is conducive to the widest variety of agricultural produce and this distinguishes the three cuisines. These regions grow grapes, citrus fruits, many types of apricots, peaches, plums, sweetcorn and an endless variety of vegetables. Cattle and sheep raising and beekeeping also flourish.
