Plovs of various sorts are the Azerbaidzhani national dish, and one type should be served at every meal. A plov consists of gara (which can be of meat, fish, eggs, milk, vegetable or fruit) and boiled rice. Additional ingredients are green herbs (spring onions, garlic, basil, tarragon, watercress, mint and coriander), a thick dry piece of unleavened bread called kazmag and sour sherbets of lemon, grape, pomegranate or mint. Meat plovs are the most varied and popular, made of lamb, domestic fowl, game birds or meat balls.
