Not to trash talk anyone’s elasti-mulsifier of choice, but ... well, as far as I’m concerned, the less said about xanthan gum, the better. There are some compelling reasons to buy this hydrocolloid, but they are political and nutritional rather than culinary: Not a lot of guar beans are grown in the United States, whereas our production of xanthan gum is huge.
