Alternative Oven Method

This method avoids shrinkage and ‘topping up’ with more fruit.
  1. Fill warmed jars with fruit. Fill to within 1 inch of the top with boiling syrup or water.
  2. Put on the clean rubber rings and lids (not screwbands or clips).
  3. Line a baking sheet with kitchen paper, and stand the jars about 2 inches apart on the sheet. Place in centre of oven.
  4. Preheat the oven to 300°F. Process according to the timetable already given, increasing the time in each case by 10 minutes.
