Butter method: A good old-fashioned way of preserving eggs is by sealing out the air with butter. The eggs should be as fresh as possible, clean and dry. Any dirt should just be wiped off; the eggs should not be washed as this destroys some of the protective film. Rub all over the egg with buttered paper, or if preferred brush with a little melted butter. Whichever way you choose to do it, it is most important that there is a thin layer of grease all over the egg so that the air is excluded. The eggs should then be stored in egg boxes, broad end uppermost. The egg boxes should not be airtight and cardboard boxes should have a few holes poked into the top to allow the air to circulate freely. Store in a cool place.
