Food is sensual. It appeals first to your sight and then to your sense of smell. It is phenomenal what a smell can do to you. It opens your appetite; it can drive you crazy. Smell triggers emotion. The smell of white chocolate takes me back to my childhood in the southern French countryside. All I remember is I was on holiday, I was carefree and happy and that chocolate was the most delicious thing I had ever tasted. That is what smell can do. And finally there is the taste. When food arrives, you see it, you smell it, and you taste it. But for me it doesn’t stop there. You swallow the food and it travels through your body. It is intimate. It becomes part of you. I have always felt an enormous respect for that.
