I knew Alex Hawkes and interviewed him many years ago for one of my columns in The New York Times. I know how dedicated he was to the cooking of the Caribbean and Latin America. He was an accomplished cook, an outstanding researcher who knew how to write recipes with clarity. This is probably the best of the regional cookbooks dealing with Caribbean and Latin American cookery.
