I have noted elsewhere that one of the most fortuitous events of my life was meeting Virginia Lee, perhaps the greatest nonprofessional cook I have ever known. I worked with her for two years in producing this book (she practically lived in my kitchen during the period). I am prejudiced, of course, but I think it is the best Chinese cookbook in print. That is not self-praise. As I have stated, the book is a testament to the genius of Virginia. I acted only as mid-wife.
