This is one of the grandest and most ambitious of cookbooks and all the more remarkable that it is available in English. Americans are simply not all that well acquainted with the food of the Middle East, which deserves a great deal more popularity than it is accorded. It is some of the most varied and tempting in all creation. This book is a tour de force, amply illustrated and as close as any book could come, to my way of thinking, to the definitive recipes of Greece, Turkey, Armenia, Israel, Lebanon, and so on. It is astonishing in its scope.
