I am convinced that the cooking of Vietnam is one of the glories of gastronomy, more limited in scope but equal in the extravagant goodness of its flavors to that of China. It is unfortunate that Vietnamese cuisine is so little known in America and all because of that traumatic, unspeakable war that debased us all. This is no doubt the finest book on Vietnamese cooking to have been written in English. It is excellent.
