Oysters are very much a part of English history. Even the Romans loved our Colchester oysters so much they made Colchester, or Camulodunum, as it was then called, the capital of Roman England. Native Colchester oyster shells have been found in Rome during archaeological excavations. Most English folk nowadays, though, live in fear of oysters. We rarely eat them or even know where to start. How many people can prise open the shell to reveal that pure taste of the sea, or ’le gout de la mer’, as the French say?
